A small amount of salt is harvested each year from a large pink salt lake in Western Victoria which dries each summer. The salt is hand harvested and sun dried and makes everything lovely jubbly. A partnership between Mt Zero olives and the traditional land owners of the Wimmera region, the Barengi Gadjin Land Council.
